You don't need to wait to apply for SSN. And she can apply for Work Permit (EAD) when she applies for AOS.

Edit: It's free if done at the same time. I also recommend applying for AP at the same time, even if you don't think you need it.

After you are married and have the marriage certificate, you can apply for the work permit. If you apply for AOS, the fees for the work permit and travel authorization are waived and you just pay $1070.00 for the AOS(BIO fee included in this).

You do not need to wait 14 days to apply for the SSN. You can apply right away now.

She can apply for the work permit (EAD) when you are both married and she files her adjustment of status.
