going on a cruise while on k-1 visa

I'm in a similar situation, going on a cruise with stops in Grand Cayman, Belize, Roatan (Nicaragua), and Mexico.

My wife has the AP card but still waiting on Green Card. Will we need Tourist stamps/Visas for each of these countries?

Your wife travel based on her passport. If citizens from her country are required to get visitor visas, then she is responsible for obtaining them in order to board the boat. If she fails to get the appropriate visas, she will not be allowed to board and you will lose your money.
