I've just paid the MVC fee on the immigrant visa webpage, but it states that I can check the status of my (ds260), when I filled out a ds160. Is this typical?

Also, is it mandatory they require photocopies and originals of all documents taken to the interview excluding your passport?

A K1 does not do DS-260, but you are interviewing and such with the immigrant visa unit. Immigrant visas typically do DS-260. Just consider yourself a step-child who they never give the proper attention to when they start writing things.

Rule of thumb- If you need an original document back, then provide a photocopy of it.

Things you typically want back are birth certificate, name change document, divorce decrees.

Maybe financial records, but those don't even have to be original. Photocopies are acceptable proof at the interview.

Things you won't need back are

I-134 (surely fiancé saved a copy on her computer for reference)

Also don't give away your one and only copy of something. Always good to have a photocopy at home of everything just for your records.
