Affidavit of support (form I-864) necessary?

Hi!

Me and my fiancé applied for the K1 visa about six months ago and my interview at the embassy is coming up next week. We are planning on getting married within the next month in order to start the paperwork as soon as possible.

I was looking in to the form to fill out after the marriage and what needed to be included, and I have some questions I hope one of you might have the answer to.

Form I-485 specifies that you should include an affidavit of support from the sponsor, in my case my fiancé. Now the thing is, for the past year my girlfriend has been living with me in Europe. She has been working here so she doesn't have a tax report from the US. She moved back to the US about two months ago and she hasn't found a job yet, she probably will within a month but right now she's unemployed. Is this gonna be a problem?

We were planning on staying with her parents until I get my work authorization because I already have a job offer. I just have to wait for the authorization.

So do we really need to include that form or will an affidavit from me where I'm stating that I will support myself be enough? I could also include a bank statement from my bank.

get a co-sponsor one of her relatives in America or a friend, they have to be US citizen and live in America
