What do I need to sign for the Interview

Our Interview is 03FEB at the Abu Dhabi Embassy. I just have a question on what, if any, documents I am submitting that I have to sign other then the letter of intent.

Since I own my own business I will also submit 3 years of business tax returns and 3 year of personal tax transcripts, I have prepared a letter on company letterhead explaining that I have been a permanent W-2 employee of the company since Dec 2003, my ownership and the income pass through from the company to me, I will sign this. Of course I have my January 2015 pay stubs, my 2014 W-2 and bank letters for the company checking account and my personal savings and checking accounts.

I am assuming you are the U.S. citizen. If so, you are required to sign Form I-134, Affidavit of Support and submit it at the time of the interview. The financial documents you mentioned are attachements to that form.
