For the K-1 visa usually only the beneficiary get interview .Some countries it is better if the petitioner go to the interview with the beneficiary, but the country you applying for it will be ok if only the beneficiary goes to the interview

The petitioner does not need to be at the interview, even if you go they might not let you enter.

21 Aug 2013: I-129F Sent

11 Feb 2014: Visa APPROVED!

20 May 2014: Wedding!

London: USC does not need to go to interview. Does not help a bit.

They may go with prior request so their name gets added to the list.

For K-1 only the applicant goes but in some cases I've seen they have contacted the US citzen if they suspect fraud or not enough evidence but thats rare I think.
