That's plenty of evidence, don't worry. Only thing you have to prove at this stage is having met in the previous 2 years.

If I recall correctly (and I'm sure someone here can correct me if I'm wrong) pictures and boarding passes take precedence to calls or texts. My fiancee and I only talk via skype of facebook, So I took a screenshot of a few instances of our chats spread out over the last 2 years. However, I included heaps of pictures of us together including some with my parents and with my children. Worst case scenario you will get an RFE but looking through timelines those don't seem to really back people up so long as they are hasty responding.

Should I have sent proof saying my fiancé and I met within two years? I just sent the filled out application.

You should have sent the proof. Please read the guide http://www.visajourney.com/content/k1guide Everything is explained there step by step. Did you send just filled petition or the check for $340 as well? If you have those two they will send you RFE for missing documents, if you have just the petition sent you will have it returned to you for refilling.

They will need it no matter what, so prepare all the proof you can. That way you are ready to quickly send everything they need, because once they send you an RFE they suspend processing your case until they have your response to it.

Yes for sure and be sure to do the same!

I was going through the Guides and found a pretty helpful NVC guide and it listed an email address that you can inquire if they have received your case from USCIS.

Instead of calling on the phone, I decided to just send an email inquiry!

So hopefully I will hear something next week.

I've been going over the NVC website and the whole process seems a little confusing to me...

Thank you so much for all your help!!! Fiancé and I are stressed with still being full time students so it's hard to find time to sit down and work on our process, but I guess it will all come together in time!
