We had a convection oven in Denmark and I don't know if it was just my perception, but stuff seemed drier when cooked?

I haven't had that problem with that. It's been great we just didn't try it out on the turkey yet.

why not?

The horse meat in Holland must not be as juicy as the horse meat here :P

I blame my husband I wanted too but he's a chicken. Didn't want to dry out the turkey maybe ?

oh wait a minute Troph.....

I remember when I was shopping for these. There's a type that takes in ambient air, heats it, and shoots it in. And there's the type that recirculates the air inside.......

I wonder if that has anything to do with it.

in the broiling cycle, heat comes from above.

In a true convection, the air from the fan is heated right by the fan, as well as the burners.

The one Niki's talking about, just has a fan to circulate the air.
