I haven't had that problem with that. It's been great we just didn't try it out on the turkey yet.

I brine the turkey in sea salt (among other things) for a day. That tends to keep it moist.

I remember when I was shopping for these. There's a type that takes in ambient air, heats it, and shoots it in. And there's the type that recirculates the air inside.......

I wonder if that has anything to do with it.

Could have been any type, there were like 8 different setting with different triangles and different fans, but no words and no instruction manual. I could have been broiling and blowing air for all I know.

in the broiling cycle, heat comes from above.

In a true convection, the air from the fan is heated right by the fan, as well as the burners.

The one Niki's talking about, just has a fan to circulate the air.
