My I129f packet was received on 11/5/2014 and i was wondering if it is too early to get the officer statement from my bank.

Is there a time within it must be when provided to the embassy. Her embassy is in Guangzhou, China For example, does the bank officer statement need to be dated within 90 days of when the interview occurs?

In addition, i am confused on the evidence requirements for everything needed. I thought i needed 3 years tax documents but did not see it in the instructions. Can someone tell me everything i need as i want to make sure i have it all and wanted to begin gathering so i can send to my fiance.

You need whatever your consulate's instructions tell you to provide for the interview. For the I-134, typically you need the most recent tax return/transcript, letter from employer and/or recent pay statements to prove current income. If you are self-employed, then you can provide more than the most recent year's tax return, if it will help prove your stable, ongoing income meets the requirement.
