So my wife has within the 90 days of the second anniversary to file. After we print the form, and get a money order for the fee, (I assume a money order is correct?), what else do we need to send to immigration to avoid the interview? And if we do avoid the interview, does she get a new green card in the mail?

Right now she has tax forms from 2013, we have two shared bank accounts, and she applied and received a credit card.

There is no way that you can guarantee not having an I-751 interview; there is always a random chance of having one, even with the strongest of evidence.

You can pay by personal check or money order.

The I-751 instructions includes what evidence you should include. These can be shared bank accounts, shared credit cards, shared health insurance, photos, drivers licenses with shared addresses, a lease with both your names, shared car ownership, car insurance in both your names, affidavits from family/friends, married filing jointly tax returns.

I suggest a personal check, only because it will let you breathe a sigh of relief that they actually got it when the check gets cashed.

My wife also has another question. She wants to travel abroad in December. But she thinks she will have problems traveling with an expired green card and a letter stating its extension. Is there a way to get a new green card with the new expiration date, even if we have to pay? Please help.

No, but you can probably obtain an I-551 stamp at your local office through an Infopass appointment.
