On the application, it asks for the address at which the fiance will reside once here. I put my current address down but I doubt seriously it will be my address when he gets over here. I'm in the process of applying for jobs and am willing to move for the right opportunity. Will this affect the process or our eligibility?

No, just put where you live now. I think its primarily for correspondence purposes as much as anything. You can always notify them if anything changes, it wont affect your application.
