I have a question I have been offered a new job with another company and have just received NOA 2. Can I switch jobs during the process or will this mess it up and not get approved during interview??

Yes you can switch jobs. The only way it could affect the petition is if the new job salary doesn't meet the income requirement (then you would need a co-sponsor). Other than that, it shouldn't be an issue. Just don't forget to update your Affidavit of Support (and the supporting evidences) during the interview stage.
