That will be considered visa fraud and she may be considered ineligeable for AOS. Visitor visa is intended for people to visit the country. Since you already apply for k-1 visa, it would be almost impossible to convince USCIS your girlfriend entered the country for visiting purposes.

Remember, visa fraud is a very sensible issue for immigration and the main reason people is not admisible to the states.

Absolute rubbish

Fraud cannot be used as a reason to deny AoS as long as the alien didn't lie at the POE to gain entry.

It is one of the reasons why many people have trouble visiting the US but in the OPs case there is nothing to stop him adjusting her status if it's a straightforward case as long as he understands that she will be unable to leave the US for a number of months so hopefully she'll have no reason to need to go back home any time soon.

If she is in the country right now and doesn't want to leave, legally she can get married and adjust status. She should not leave the USA until she has at the very least her AP. However, as K1 don't generally take long and if she wants to go back and say good bye to family and friends etc... It's likely not too long before she'll be over on the K1 visa anyhow.
