So we are in the AOS process and my spouse received her EAD. I know that when she applies for her SSN, it will be for work-purposes only. After she gets her green card, how do we get the work-purposes condition removed and how long does it take for her SSN to be fully beneficial?

She will need to take her GC and SSA card with her to the local SSA office, fill out another SS-5, explain the new circumstances, wait for the new card in the mail.

The number is hers for life. As far as the SSN being fully beneficial, you need 40 qualifying quarters of employment to qualify for SSA benefits. The tax ID part of the SSN becomes active once the number is issued. The SSN as an ID number that most people use and have no right to do so is also available once the number is issued, but a credit history will need to be developed and that takes some time.

My wife updated her Social Security card in the interim between receiving her EAD and waiting for the two-year green card. At the very least it allowed her to update to her married name and now that she's familiar she'll zip through when she gets the green card and they produce a new SS card that doesn't include the "Valid for work authorization only with DHS approval" text.

Is it possible they print the cards on the spot? I don't remember her receiving it in the mail. Could there be a different policy in different SSA offices?
