According to the guide, http://www.visajourney.com/content/i130guide1, the process requires I submit my last 3 tax returns to prove I have adequate income, which must be "125% above the U.S federal poverty". What do they look at from the 3 tax returns? Do they take the average annual income across the 3, or the highest of the three, or what?

I haven't worked for over a year, voluntarily. I have plenty of savings and wasn't planning to work again until I have a wife back in the US. I only worked 5 months in 2013 though my tax returns from 2013 above the %125 limit. My 2012 tax return is well above the limit. My 2014 tax return will be closer to 0, I'll just have a little investment income.

They look at current income or assets mostly. You need to be currently making 125% or have 3 times the assets (not in a main residence) to qualify without a joint sponsor. Some embassies require the last 2-3 years. Some do not.

Are you sure having 3 times the assets will be sufficient for all the marriage visa types? I've only seen it referenced for the K1 (I'm certainly no expert, I just want to clarify what you said).

yes for spousal visas it's 3 times the assets. For a joint sponsor it would be 5x but for the spouse it's 3x.
