I864 Self employment question for someone who recently become self employed

I'm filling current income information on I864 form, sponsoring my wife for green card. I formed an LLC company about 4 months ago. What kind of proof of income from self employment would I need to submit with paperwork, since I don't have paystubs being self employed. Would letter on company letterhead would suffice? Also the I864 instructions state that if "self employment" box check off then, last year tax return would have to have a business component such as schedule "C" etc.. But my business being started this year, I don't have have schedule "C" from last year tax return.
How would you handle this in your opinion?

I don't think there is any way to prove a yearly income when you are self employed for only 4 months unless you have some big signed contract for your services that meets the requirement. Who knows how the business will go until you put it on paper in the form of a tax return, which is what they require of self-employed.

What can you show for profit or loss? Remember any expenses you claim on a tax return deducts from your income. With a start-up, you may have spent a lot of money and are still in the hole.
