Once you've applied for AOS, how do you "prove" that you're still "legal" after your visa expires?

Does the proof of application for AOS prove this until you receive the notice that your application is in process?

Until you get your biometrics appt., does the notice (last sentence) "prove" your status?

From what I've read, you don't actually get your passport stamped again until you go to the GC interview, so, I'm just wondering what paperwork do you show, say if you're stopped at one of those Arizona immigration checkpoints?

I haven't done AOS yet myself but I do know once USCIS receives your paperwork you receive the NOA1 in the mail. That is enough I think to prove AOS. NOA1 documents basically explains itself and is a receipt of the AOS beginning.

I've only can answered your question if you are going to adjust your status from K-1.

  • After you entered US, K-1 visa is void and no longer can use. Your legal present in the US started ticking from the date on your I-94 up to 90 days. After the period of that your status consider as illegal until you filed I-485 (married to the US citizen is not guarantee you an authorization to stay). During this period you are in period authorization granted to stay until your green card have been approved.
  • I always brought my biometric appointment letter, NOA-1 for I-485 and NOA-1 for I-765, marriage certificate, and my passport. Not all government agencies employees understood the whole immigration process. Be aware of that. Study all the process so you will have correct answer when they have questioned you especially if they saw your visa expiration date which is no longer usable after you come to the US.
  • If you are live in near the border, better to file AOS as soon as possible. There was a post about it on VJ that someone got arrested because did not file yet his AOS.

You will have your NOA1, I-787 which is your receipt notice, that shows you have filed for AoS. If your I94 is valid you have that up to the point you have your Noa1 in hand.

You are supposed to carry your passport and this stuff with you at all times, I never do but you are supposed to. Once you get GC your supposed to carry that with you at all times too.
