Although, my fiance has not gotten to the interview phase yet, what I understand from others in this forum (and a friend who went through it), that most embassy interviews are conducted in the language of choice of the beneficiary. So, if you're fiance only speaks Chinese, they will conduct the interview in Chinese. If your fiance can speak a little English, it won't hurt her/his chances to give it a try.

In Brazil the interviews are in Portuguese.

Knowing English is not a prerequisite for obtaining the K1 visa so it would not be fair to have them only in English.

In Brazil the interviews are in Portuguese.

Knowing English is not a prerequisite for obtaining the K1 visa so it would not be fair to have them only in English.

I and some other people have had our interviews in English in Rio. There's been some discussion about how much English the beneficiary should know, as people have to be able to communicate.

I only offer advice - not even legal. Just the plain and simple kind.

My fiance does not know English and we communicate fine - as I am fluent in Portuguese. We met while I was living in Brazil and I speak the official language of where I was living. He has never been to the U.S. and only recently started to English classes. He will continue as soon as moves here.

That would be my concern, you should at least have one language in common, or it'll throw up a huge red flag. So whether that be English or a foreign language, I'm assuming they do interviews in both.

Perhaps a silly question, but are the Interviewers bi-lingual or are the Embassy Interviews in english ? In our case we would be going to the US Embassy in Guangzhou.

Yes The interview can be conducted in chinese if she has limited english ability. However be prepared to show that you can communicate with each other. It may be asked and you will need to have this answer.

I don't know what standard protocol is in Guangzhou, but my fiancé’s experience was this: The Consulate Officer did not speak Chinese and a separate translator was present, translating back in English. Even though she ihas been English teacher in China for 20 years no less, they insisted on this arrangement. The good part was she knew if the translation was correct. The rub came later. The application was pended for Administrative Review, and returned to the United States with a recommendation to revoke. One of the six reasons listed by the C.O. for that recommendation was that we had no "common language", which was completely erroneous. The case has now been "reaffirmed", sent back to Guangzhou, and is pending another interview.

I don't know how common this is, but whatever you can do to eliminate this boiler plate reason for decline might be important, if not vital.

My wife (fiancee at the time) had her interview in Guangzhou. It sounded to me that it depended upon the interviewer whether or not to make an issue of the language. That was the one thing we were worried about, as we had quite a bit of other evidence gathered together to show an ongoing relationship, means of support, etc. She told me her interviewer did ask her if she knew English, she answered that her English was not strong or not too good and the interview was conducted in Chinese. We did spend a few days before the interview, coming up with answers to general questions, where I l lived, question about my family (names, birthdates) etc.
