I made David fish & chips for his birthday and he was impressed. :thumbs: Bought a deep fryer and everything (figure we'll be eating more of this!)

But, I would like to personalize a recipe of our own... something that has a little more flavor. The recipe I used was a beer batter recipe that I found on a uk recipe site...

Anyone have any favorite batter recipes they'd like to share?

When I make fish and chips...and we do fairly often I make a beer batter and I use a dark beer with it. Tis yummy.

But you can also use soda water. Some people i've heard add hot pepper to their batter.

Personally I like the beer batter!

I worked in a fish & chip shop and this is the way we used to make it... I have reduced the quantities for home use...

4 oz (110 g) self-raising flour

½ teaspoon salt

5 fl oz (150 ml) water

Mix up the the flour and salt then gradually mix in the water, dip the fish in the batter mix and add to the hot oil and cook until golden.

The fat must be very hot or the fish will be soggy and oily...
