AOS: If I have a joint sponsor, what do I need to show?

My job won't be continuing after we move, so my father is going to be the joint sponsor for my husband. What I'm trying to figure out is what still needs to me included in the package regarding my own finances. I do think I read somewhere that in my situation I need to show my tax returns (working on that...) but maybe not anything about my income/assets? If I don't have to bother with that stuff, it's just as well. I mean, I can get an employment letter here in Vancouver but if my job will end when I leave, that seems pretty useless. For my father of course we'll show all monetary and other assets, as well as tax returns.

I do apologize as I know this is pretty standard stuff, but I can't seem to find an answer through my many searches. Feel free to link to a thread that answers this question (I looked already through the best wiki guides and gov pages....)

Hi, you still need to file I864 and include your most recent tax return (or 3), employment letter and stubs. If your situation changes by the interview date, you will have to update it but it seems you're not planning on moving before your interview date.

It does seem weird to me that I'd have to show an employment letter for a job that's going to be ending. I wish I could find a clearer answer from a gov page. I will include those things, though, thank you.

I read somewhere that for an adjustment of status, your employment letter has to be from a job that your current income will continue to come from but I don't know if it's the same for AOS. Private message Saylin, she's really helpful when it comes to this (she did the nvc process wiki).
