I Just changed jobs and the interview appointment is in 12 days, I will not have a check stub yet how do I prove that I have a job that will pay enough to support her.

Get a letter from your employer showing your yearly income and that it is a full time position, plus the embassy will still want your most recent tax return and W-2.
