My husband is from a country that requires a visa to visit Canada. It is my understanding that Green Card holders are exempt from that requirement. I was hoping to plan a trip to Canada, however my husbands conditional GC has expired and we are waiting for his 10 year GC to be approved. I know we can come back into the US with the extension letter and expired green card, BUT do we need a visa to enter Canada now or will the expired GC and extension letter suffice?

You don't need a visa to visit Canada if you are a greencard holder. Your husband would be just fine with the expired GC & extension letter.
