It is recommended to have the originals, as well as copies at the interview, the consular officer can ask for anything that was in your petition, and may want to inspect original documents.

It would be a problem if the consular officer asks for something and it is not available to hand over.

But we sent stuff like paystubs so they have the originals

When sending in our petition we sent copies of everything except the forms needing original signature like I-130, I-129F, G325A... All evidence documentation were copies. Things can get lost at USCIS, NVC, Consulate, that is why having the entire package is recommended to have at the interview.

From USCIS recommendations:

Avoid submitting originals unless specifically required (Forms I-94, Labor certifications, etc.). Avoid submitting oversized documentation when possible.

When we sent off the I-864 we had to send stuff like copies of my father in laws Driving licence and Marriage Certificate... do you think I need the originals for the interview ?

For that copies should do, that is secondary evidence.

We had to bring the original and copies of every document. They kept the copies and returned the originals. Now about the I-864, they are supposed to have everything they needed. We brought copies just in case but they were not asked for.

N-400 (based on 3-year marriage rule)
