Along with my I-485 I am applying for an Advanced Parole document using the I-131 which I understand many people do. I would use this later in the year to travel to Japan and China to visit my new wife's family, if I use it at all.

PArt 7 of the I-131 asks me to explain why I think I qualify and to explain this on a separate document. I was going to write I may visit family friends, but then I noted in the I-131 instructions it says you may apply if 'You have a pending application to adjust status', but then goes on to say this must be for 'urgent humanitarian reasons' or 'significant public benefit'. I mean to me keeping my wife happy counts as both 'urgent humanitarian reasons' and 'significant public benefit', but I don't think the USCIS will see it that way :P . I am wondering what have other people wrote for this? And what should I write!?

As ever, help is appreciated!

Thanks! I was not aware that these examples existed.

So should I leave Part 4 1.a. and 1.b. (Purpose of trip and List of countries you intend to visit) blank? And just explain these things in the separate I-131 Part 7 supplement?

Yes, I also left them blank since I have no plans yet for a future international travel. Most AOS (from K-1) applicants would also leave part 3, items #1 and 2 blank as well, and just write legibly with a pen "unknown" and "N/A", respectively, after printing-out. That is, if you have no definite plans too as yet.

You do not need to provide a reason why you want/need AP. It is not required when filing with a pending I-485. It is stated in the form instructions. So do not worry about a separate sheet explaining anything.

You do not put anything in Part 4. You are applying for AP, so you skip from Part 3 to Part 7.
