Hi, my mother is having her "green card" interview tomorrow at the Spanish embassy in Madrid. She has all the documents in order and no other document or fee is pending. Will she get her Green Card right there and then? Will she be able to travel to the U.S. immediately after her interview? Do they stamp her passport or hand her a "green card"? Thanks!

She will not receive her green card until she arrives in the US. What you are referring to is her immigrant visa which is placed in her passport. It is unlikely to be done "on the spot" as it has to be printed and affixed to the passport. Check the website for that embassy to see what their procedure is. Some places ship the passport to you and some places you have to go pick it up.
