I'm not an expert in this, but from my understanding, household size is determined from one's 1040.

That is, it's household size = taxpayer + declared dependents.

So for your parent, how many is/are her declared dependent/s? For her alone, if you add your wife, is she still above or compliant to 125% of the poverty guidelines? http://www.uscis.gov/sites/default/files/files/form/i-864p.pdf

As Hank advised, you're not included in your mom's household size.

Edit: From your timeline, your wife will most likely be interviewed this year. So you only need to use 2013 and not 2014 ITR. Unless by any chance, you get adjudicated by early 2014, which hopefully doesn't take that long.

Hopefully by June we will have an interview set . Just paid IV today and will send AOS this week . My wife is mailing me the papers for the IV and I will put that together and mail next week . I know Manila is tight right now with the typhoon expedites . By now it must be getting back to normal hopefully anway .

I just realized that for IR-1/CR-1s, you will be including the I-864 package with your AOS at NVC stage, and not during interview. I'm sorry that I couldn't be of much help and hoping with you that experienced IR1/CR1s will chime in.

Timeline

Go onlline and grab your date as soon as you can. June dates are vanishing fast.

They are IR/CR-1, NVC schedules their interview (unless they are an expedite because of Yolanda)
