Waiting, waiting, waiting, might as well eat food! :) Kuy Tiev Recipe?

So, we just sent in our I-129F. And received our NOA1. But now the waiting begins.

I am not terribly good at waiting, particularly when it means no trips to Asia in the meantime (need to save our money for that far-off dreamy interview date to come :) ) So I decided I want to cope by making food from my fiance's country.

I know there aren't a lot of Cambodian-American couples on here, and I can't seem to find a Cambodia specific forum, so I thought I'd post this here. (perhaps this isn't the right place, and if so, my apologies)

Are there any Cambodians or lovers of Cambodians or Cambodia or even S.E. Asia in general who might have a recipe for Kuy Teav, (sometimes spelled Kuy Tiev) or better known as Phnom Penh Noodles?

I cannot seem to find a Cambodian restaurant or market in Chicago, and even though I love Thai and Vietnamese noodles, it isn't quite the same.

Recipes, anyone?

(or would anyone be willing to offer me a favorite recipe from their fiance(e)'s home country I could try to make during this long waiting process? Cooking helps me cope. :) ))

Blessings to us all and all the processes we are undertaking!!!
