This may not be relevant to your question but it is vital to your case.

"For fiancé(e) and Diversity Visas, your petitioner should submit the Form I-134 Affidavit of Support. Although it is not a legal document, it shows that you will not become a public charge and require the US government to support you. If you have derivatives traveling with you, it must include them as well."

At the waiting area of St. Luke's Extension Clinic where I had my medical exam, the monitor was flashing info on various visa requirements. One that caught my attention was this: "One the most common cause why a K1 visa is denied: Incomplete I-864 (formerly I-134)." I suggest you ask your fiancee to send you an Affidavit of Support and bring it with you to your interview.

Good luck to us!

But if you have the stamps right there in your passport, surely it is proof you did board the plane, or would OP have grown wings?

That what i thought too, i dont have many boarding passes. Ive been to the US 6 times over the past 4 years and have all the passport stamps. When we started dating we had no idea we would want to get married etc so we didnt keep everything we probably should have.

Thanks for everyones help
