Of course an increase is always a good thing. Just take updated I-864 to interview and give over with your paystubs.

Current income means, what your wife is making right now. For instance, if she work full time and was making say 14/hr and got an increase to 15/hr, current income should be 15*2080 because she work full time.

Attached the last two weeks pay stalks. If she can request a new letter from employer showing current annual income, it will help since the letter you guys have reflect past incomes. Did he/she also got a letter stating her increase on it? If so, you can also make photocopy and attached it as well. Lastly, you can just attached the two weeks pay stalk with explanation indicating recent increase. That wouldn't hurt.

Yes, change it but you don't need six months of pay stubs. Her current one probably shows year to date income. Does it not?

It doesn't really matter if you show two weeks pay stubs instead of six months. If the two weeks can prove recent increase, you should be fine. That's the current income. They will look at the paystub and will know how much He/she makes an hour. I highly recommend that you include an explanation stating recent increase if you can't get another letter from employer. If they decide to send rfe, you should be having additional pay stubs by then. I submitted two months pay stubs so it's not mandatory to submit six months. All USCIS wants to prove is your current income.

All USCIS wants to prove is your current income.

No, that's not all the Consular Offficer will want and USCIS will have nothing to do with the decision regarding this I-864. One year to date pay stub that is current is stronger EVIDENCE (not "proof") of current income than any employer letter. Of course, they'll be submitting information from three tax returns a complete copy of at least the 2013 return.
