Do I need the Intent to Marry form notarized? Can I fax the Intent to marry form to my fiancé and have her sign it in Mexico and then fax it back or does it have to be the original? She does not speak English so does it have to be in Spanish or just an English translation? Also am I supposed to submit proof of contact within the last 2 years with the initial filing of the i129f? Like photos, passport stamp copies, telephone bills, etc.? Thanks for the input.

-I did not do that. I used international mailing, as I didn't do it when she was here. But I recommend an original.

-I'm not sure about the language, but I believe English.

-Yes. Proof of meeting in the past 2 years.

-Optional. You're referring to proof of ongoing relationship, which is not required for I-129F application process but will be during your Fiance(e)s interview in US consulate abroad. I went ahead & included some evidence.

Original signature is what should be used. Some people have used copies/faxed letters of intent and been fine, but some have also received an RFE for not using an original signature. The letter of intent needs to be in English, so just make sure she knows what she is signing. You could also have her do a letter of intent in Spanish and provide an English translation for it, but it is just easier to do it English to begin with.

You need to prove you have met in person within the 2 years prior to filing. So, provide copies of passport stamps, boarding passes, financial receipts from using your ATM or credit card while visiting, photos together, etc. that proves that. Bring the rest of your relationship evidence, and any you gather while waiting for the petition approval, to the K-1 interview.

Thanks for the input you guys, I appreciate it. So with the initial filing what forms do I need? Passport photo of both, G 325 A for both, I 129 f packet with declaration of how we meet, copy of birth certificate front and back for both, intention to marry form for both, payment with check for 340. Anything else? The proof like boarding passes and stamped passport copies is submitted initially right? Thanks

Also, read through the I-129F form instructions > http://www.uscis.gov/sites/default/files/files/form/i-129finstr.pdf

No need to mention being second cousins unless asked on a form or directly by the interviewing officer at the K-1 visa interview. Or, if being related is how you met, then yes, you will need to mention it then when describing how you met and your meeting in person within the last 2 years.
