Does my fiance an I need to write a new letter of intent to take to the interview or only me alone. Should write a new one

A letter of intent should be done at the time of the petition and sent along with the petition from you and a separate one for yourself. It is a good idea to do another letter of intent close to the interview date from the both of you but its not required.

This is exactly what I did. After I sent the package in my fiance went to get a the Non impediment to Marriage form. We will use that form later down the line in the process.
