I travelled to the UK and to Australia with my expired GC and extension letter and had no issues.

Did the officer at the airport ask a lot of questions?

No trouble at all with CBP when using the letter + expired GC. The airlines on the other hand seemed a little confused when presented with it. I had to point them to the section in TIMATIC (their internal visa/document checking system) where it says that the extension letter is a valid document.

yes you will be fine. I travelled to Canada the officer just said oh you must have had a conditional green card and did not say anything else and let me through.
