I am an American citizen. My fiancee is Guatemalan and has held a multiple entry tourist visa for quite some time and has traveled to the USA on several ocassions. We would like to get married in Guatemala and then travel to the USA together.

After we get married, is there any problem for her to travel to the USA on her tourist visa and then for us to file an Adjustment of Status and for her to be able to stay here in the USA with me?

A couple months after we are here in the USA she will need to travel back to Guatemala. Are there any restrictions on her travel that we would need to be concerned with?

Unfortunately there is a problem - it is impermissible to enter the U.S. with the intent to remain.

While she may be able to come visit, this too may be difficult as she will likely have to show convincing evidence that she intends to return to Guatemala.

Your only legal options are a K3 visa, a IR/CR1 visa or DCF if Guatemala allows this.

If she tries to enter the US on a vistor's visa with the intent to immigrate, she will be denied entry.

We did this in Peru and my wife got a new ID with married name, and a new passport with married name. When we went to get the visa put on the new passport, we were told that now she is married to a U.S. cit. I would have to apply for the I-130, and she no longer could use the tourist visa. So I would not have the name change till after you do the Adjustment of Status when you get back.

Her visa is just for tourist which under non-immigrant visa. She should file correct visa under immigrant visa for that so that you will not have problem at the end.
