The MMR and varicella "not available" would work for a spouse visa where they do not do adjustment of status. They have to be finished with immunizations by interview, so those would be waived.

In your case, you have opportunity now in the US to get those unavailable in the UK shots before your AOS.

It is my opinion that this is not a complete DS-3025 record because of needing a second MMR and a varicella shot. Had you told them you had chickenpox, the varicella shot would have been marked waived. Then a maybe slight chance the USCIS would let you slip by with the one MMR. But in the strictest sense, you need a civil surgeon to prepare a new immunization sheet after you have dose 2 of MMR and a varicella shot since you did not report having chickenpox.

Edit: and now because it is flu season, the CS may require you to have a flu shot before he will sign off. This form no longer counts (because it is not complete for AOS purposes) and it is the date you get the new I-693 form signed that counts for needing a flu shot.

Only the first shot in a series is required for AOS. Therefore, a second MMR shot is not required. Not sure about the varicella since a date is given. I didn't think this was a series, in any case if it was received already it won't be required.

Rather, they are required to have received at least one dose of each recommended vaccine, and they are encouraged to follow up with their primary health-care provider to complete the series.

It also says in that link

" If the applicant had previously received a dose or doses of a required vaccine but had not completed the series, then the next required dose should be administered according to standard ACIP."

MMR has a 4 week waiting period between doses. if you went to the CS with no doses, he could give you DOSE 1 and waive DOSE 2 with the reason "insufficient time interval". It is not medically appropriate to have 2 shots less than 4 weeks apart. The CDC is saying the immigrant does not have to go home and wait 4 weeks to get a second shot before the CS can sign off. He can be given a waiver and done in one visit.

If the OP went to a Civil Surgeon with DOSE 1 in 2007, there is no medical reason why he can't get DOSE 2 that day. The CS has no medical grounds for a MMR waiver unless the OP happened to be pregnant. The CS should follow the guidance "If the applicant had previously received a dose or doses of a required vaccine but had not completed the series, then the next required dose should be administered according to standard ACIP ". The OP could be given a shot and also done in one visit.
