Will changing employer prevent K1 visa

My fiance is looking to leave her current job and start a new one which will pay slightly better both 5k above the minimum 125% for 2 people.

I am about to enter the interview stage so it would be after that but if she started a new job shortly after i received my K1 will she still be able to sponsor me for AOS with only 2 months pay provided her yearly income is above the threshold? or is there a set time you have to be in employment?

For AOS, they are mostly concerned about what you currently make, so your fiance should save all of her pay stubs and get a letter from her employer showing her hours, salary, and what the projected income will be within a year. You will be fine for that.

Out of curiosity, did she make more than 125% in her last job or are you guys getting a co-sponsor for the affidavit of support needed for the interview?

She makes around 25k now and will make a little more at this new job if that goes ahead. But will two or three months at the new job be a stable enough income for them? we are worried as to whether she should leave her job now or wait till after AOS because she desperately hates it there

If she is making 25K without the new job, then she is already over the required 125% above the poverty line. When you apply for AOS, you'll have to send in her tax return from the previous year (we personally sent in tax transcripts from 2009 and 2010, and the W2 and 1040 from 2011), so that is already going to show stability in income. Since she will be in a new job, I would also send in her last two months of pay stubs and a letter from her employer as I mentioned above. I think if you send all of these things, you'll be fine. It shouldn't matter that she'll only be 2-3 months in to a new job.
