I was wondering I see that here they say last 3 years of tax documents but it does not ask for them in the instructions. I have 2 years handy (electronic) and was wondering if that is good enough.

Also, the 125%, is that pre taxes? Either way I'm fine... It's just pretax amount would look a lot better than post, also my kids get survivors benefits (an additional almost 20k a year) should I include that as well?

Which instructions? The tax returns/transcripts are only required at the interview stage, together with the I-134. Most embassies require just the previous year's tax returns, some require 3 years, do a search for the information requested at the embassy your fiance(e) will be going through. You can scan in your tax documents or download them off the IRS website (takes only minutes), and email them to your fiance. The I-134 needs to be signed by hand, though, so you have to mail that to your fiance.

They will look at gross income, i.e. before taxes are taken out. If you have minor kids, you need to count them in your household size (regardless of where they live), as well as any other dependents you claimed on your taxes. See http://www.uscis.gov/sites/default/files/files/form/i-864p.pdf for the corresponding amounts.

I'm not sure how survivor's benefits works, so will leave that for someone else to answer. :)

The instructions for the I-134 list different types of evidence you can provide to prove your income. None of these are absolutely required. The tax returns are not listed in the instructions, however they are commonly asked for by the embassy. Usually just the most recent year is asked for, so you should be fine. The 125% is GROSS income, before taxes.
