there is no "third" option. Either the petitioner makes the income requirement or you get a joint sponsor. No other options. Zero, zilch, nada, nothing

There is no third option.

What happened to mother-in-law being a co-sponsor? And why doesn't wife return to the US and get a job? May take a year or so but that should get her enough time to prove income and sponsorship level for you, no?

well, there are 3 options:

1. The petitioner sponsors (may need to get a second job, or if abroad, move first)

2. Get a co-sponsor

3. Sponsor on assets; need x3 the 125% poverty limit, and the assets need to be easily liquidated (savings, 401K, second home etc)

This response is rude and dismissive of the OP, when in fact there is a third option of sponsorship -- through Assets.

I'm sure the mods and forum monitors are taking note & not turn a blind eye to such.
