Too many variables to say...your income needs to meet 125% of the poverty guidelines for your household size listed here: http://www.uscis.gov/sites/default/files/files/form/i-864p.pdf

If your jobs are new, it would be helpful to show that you have made stable, consistent income over the past few years. Even if you didn't, generally you should be fine since current income matters more than past income. If you have someone willing to co-sponsor, you could ask them to prepare their forms just in case, and bring them to the interview as a backup plan.

When is your fiance's interview? The more time you have between your start dates and the interview, the more paystubs you can gather. It will help build a more convincing case that you are likely to hang on to the new jobs.
