I am US citizen and filing a petition I-130 for my mother who is in Pakistan. I noticed that my mother's date of birth on her Pakistani passport/identity card is different than my G-325A(Biographic Information) which was submitted during my visa processing. Do they really check mother's DOB with already provided information in any other form? Can this difference cause any problem or delay? Please advise which date should I mention in I-130 for mother dob ?

what date is on her birth certificate ??? Yes it can cause trouble but no much especially in areas with poor records and older people. With Josephs parents we reported birth dates as about xxx-nnnn because no one is quite sure of the real dates and there is no records.

This will not be over quickly. You will not enjoy this.

As long as the Birth Certificate and passport are the same it would be assumed the error was just made while filling out the forms. Usually not a big dea.

However if you have other forms of identificaiton that states various DOB you should have a proper explanation. They will most likely be looking for a varifiable DOB which is generally by Birth Certificate.
