subway is fast food.

I find it surprising as well when Subway is introduced in the context of healthy food.... A sub is fast food and while it may less bad than fried stuff, it is still a tad short of 'healthy' imho...

ssssssssssshhhhh. let me dream, man!

Oh, it'd be great. Have an enjoyable meal and the time to enjoy it? That would be great. It pains me to see that kids in my daughter's school - an all other Elementary schools in this district have all of 15 minutes to chew down their lunches. That right there is unhealthy no matter how nutritious a lunch they have.

Addressing that time pressure, and the factors that are driving it, would be a good place to start.

I am sure someone will find an obscure angle to this story; one involving a kenyan, a vast, huge and incommensurable brobdingnagian conspiracy to limit the freedom of choice of Murkhans, which will result in the banishment of all guns and the repeal of our constitutional rights; the final objective of which is the utter destruction of the US of A.

The issue driving it is the sheer number of students that needs to be moved thorugh the cafeteria which only holds a single grade level (~150 students) at a time. They have 6 grade levels needing to get through lunch. They start the K grade at 10:20 and then have a shift-change every 20 minutes to have the 5th grade finish at 12:20. If they were to give 10 extra minutes to each grade level, then 5th grade wouldn't get into the cafeteria until 12:50 and they would finish at 1:20pm - that's 5 minutes after school lets out on Mondays.

When I went to school, we had 10 grade levels on campus with roughly 80-90 students per grade level - similar total student body. Our lunch break was 45 minutes. There was an early lunch break for grades 1-4 and the later lunch break for grades 5-10. The cafeteria was large enough to hold all students that were on lunch break at a time. There was no rush.

The problem isn't with the people preparing the food, it's that the school catering contracts are run and operated by Big Food.

The cafeterias are run for profit at minimal outlay of expense, buying the minimum quality food that will meet government standards of nutrition. To change that, you need to first change the standard and not award the contract to people who use processed foods.

Of course that then requires funding to be ample to the task.
