With my fiance's interview coming up in less than 3 weeks and me having a new job, will I need to send him a new G325a (or whatever it's called) the biographical data form? Or will it be understood from my employer letter that this is a new job?

With any luck, soon he'll be here with me!

It will be understood from the letter from your employer verifying your employment and income that you have a new job. My fiance also changed employers after filing the initial petition and supplied that letter and the last three most recent payslips and three years of tax summaries.
