P1: Change Employer vs New employment

Hi!

I am currently on a P1 Visa and live in the States. I have received a new job offer from another employer and I am thinking about taking this opportunity. But I am worried that the USCIS will not approve my new employers petition.

If they file a petition as "Change of employer" and they deny it - will I still have my previous petition with my current employer?

I have read somewhere that I can have several sponsors/employers at the same time (I guess that is "New employer"). Is it more safe to file for this category in order to be able to stay if the petition is denied? Can I apply for several employers and then just quit my current job without the other being affected?
