Of these two visas which is easier to get and which is the fastest?

For the last 5 months, petition of K-1 visa appicants (I-129F) are processing a lot faster compared to past time frame. One of VJers here got approved her K-1 visa within 2 months from filed I-129F to visa interview. Meanwhile, K-3 is obsolete now or that's what people are telling here when someone wants to choose that route.

It would be between the K-1 fiance(e) visa or getting married and filing for the CR-1 spousal visa.

Would being a Canadian make a difference in what? How fast your petition would be processed? No, why would it?

The options are K1 or CR1.

K1 is faster, but is almost twice as expensive ($1630) not including travel or medical costs which must be done at specific panel physiscians. You MUST get married in the USA 90 days after entry and then you cannot leave until your Advance Parole is approved (about 3 months.) You also cannot work, even remotely, for the same time period. They do K1 interviews in Montreal and Vancouver.

CR1 takes longer but you can get married wherever you want. You have a green card upon arrival to the and the cost of the immigration is $903. You can work, collect EI if eligible, and travel right away. They only do CR1 interviews in Montreal.

Being Canadian does not grant you any benefits beyond the ease of visiting a spouse or fiance in the USA (bring proof of your ties to Canada when you cross the border and most have no trouble), and that we're a low fraud country so Canadians are rarely denied or put into administrative processing.
