You don't need a SSN to apply for EAD (I assume you are applying for EAD in conjunction with AOS and AP). You can wait until you have the EAD in hand to apply for the SSN.

However it will make your life easier if you apply now while you still can (you can apply during the first 76 days of arrival in the US). You will need it in order to work (for when you do get the EAD) and there are other instances where it will be easier for you if you have one now instead of waiting for the EAD to apply for the SSN (for example, opening bank accounts, getting health insurance, doing taxes).
