I filed I129f in early September and received NOA1 a week after my petition was filed. Towards the beginning of October I received an RFE and responded towards the end of the month. I know USCIS has received my RFE documents. What I am wondering is that should the online case status be updated to reflect the acceptance for the RFE?

it should, but sometimes the status on their website does not update.... it is strange that it has not updated yet.... I have seen RFEs take up to 60 days... but maybe you can call them on Monday and be sure it was received and it is in process.... good luck!!

Three weeks After our case transferred to CSC we have an RFE.. 2 weeks after we received the hardcopy and sent the evidence (Dec. 07) they needed. hmm... from what I see the "RFE" should also be acknowledged on the site. Although the hard copy of the RFE was received in early Oct, my case status is stuck in the "Initial Review" where it only mention about NOA1 that was updated in mid September. I guess I should inquire about the matter if I could get through the phone lines....

yes.... I have seen people go back to initial review when they sent their RFE back... but check with them... if you have not happy with what the first rep tells you, ask to be transferred to a TIER 2 rep... good luck!
