I found this while looking for NVC information:

The NVC has a process of randomly pulling a certain, unknown number of "K" visa petitions for further administrative processing. It is unknown what exactly takes place during this process. As it is in AP post interview. It may be background/name checks and/or document verification. Some CSR's at NVC have said that they are "verifying documents". But the most common answer will be that "There is no timeframe for the process". There actually is a very predictable timeframe based on VJers experience that has been shared since December 2008. The average time that a case is held during this AP is around 50 days, give or take a day or so. You can call at least once a week to ask if your file has been released out of AP and forwarded to the consulate. Most petitioners that are pulled for random AP DO receive a standard letter from NVC stating that their file will be forwarded to the embassy "within a week", this is a standard letter which is mailed out whether one is in AP or not. If you find that your case has been held at NVC for longer than a week or so; it is advisable to call and ask directly if your file is in AP.

Source here. This would probably explain why you're stuck at NVC, and give you a time frame for when you should get unstuck. Hope it helps.

Thanks Sparkle Pony I feel so much better knowing I'll possibly will be waiting 50 or so days although I have yet to receive such a letter from the NVC,

Maybe all the extra documents I submitted they are verifying, hopefully less things I'll need to resubmit...

Based on timeline data, your I129f may be adjudicated between February 1, 2014 and February 10, 2014* (RFEs at the Texas Service Center typically add an extra 30 days, which has been added to the estimated processing time).

19th of May 2014 - MOVED! POE Atlanta - Never been faster through customs, no lines and it took the officer about 10 minutes to process my papers. Very friendly.

June 10th 2014 - Applied for SSN - They could not find me in the system yet, but the lady was very friendly and said she would process it later and call me in case she needed any more information or would foresee any delay past 2 weeks she would call me.

June 16th 2014 - Received my SSN

June 16th 2014 - Got our marriage licence - Although they said I did not need a SSN in case I had not received it yet. We called ahead.

June 27th 2014- Got Married!

July 23rd 2014 - Applied for Adjustment of Status (Inc EAD / AP)

August 11th 2014 - Requested Expedite processing on AP

Well tomorrow is the last day I am in Sao Paulo with my fiance.. We took some pictures and have some bus passes from visiting his father and brother in Sao Carlos.

I'm giving him all the papers he needs from me for the interview, which I hope is soon, since the mail system here is so terrible (it took 3 months for a package I sent to arrive -- it came the same day as I did!)

Checking the case status of SRC#s around mine, they all have activity, either NOAs and RFEs.. My timeline date keeps moving BACK! Now reads January 17th. I feel like ours case is an island adrift at sea!

12/12/2013 - ARN Change

03/18/2014 - RFE sent (no email notice or update online!)

03/29/2014 - RFE notice received in the mail

03/31/2014 - RFE response overnighted

04/08/2014 - NOA2! Hooray!!! (132 days)

04/11/2014 - Post Decision Activity: Forwarded to Department of State (NVC)

04/12/2014 - Received NOA2 hardcopy. Fancy!
