So my fiance got approved for a K1 Visa we are very excited, but just curious to understand this. I was reading and I found that the K1 Visa is valid for 6 months and once you ENTER the US you have only 90 days to marry. We agreed that she stay in her country for the holidays with her family and come in late January. I'm just wondering if others have gotten their visa and waited a little bit before entering the US.

yes, you can do that. The K-1 is one time use, you can use it once during its validity time, then when you enter the US, it is replaced by an I-94 which gives you 90 legal days in the US, in which time you must marry.

AOS for my husband
8/17/10: INTERVIEW DAY (day 123) APPROVED!!

ROC:
5/23/12: Sent out package
2/06/13: APPROVED!

Use the K-1 visa before it expires, the 90 day period is your length of stay authorized once you arrive to the US and is indicated on your I-94. You must marry before the expiration date on your I-94.
