The link i posted earlier about Burgoo.... Well, the art of making it and making mutton palatable is huge in my hometown Owensboro. The old Catholic parishes still have church pick-nicks every summer where they make gallons and gallons of it to sell. Its a large source of their fund raising. KY is fairly poor but there is a lot of old money here in certain areas just like anywhere else. Once you go past Lexington heading east there's some beautiful National park land. Outside of that you have coal country. If you're not involved in coal (prob even if you are) you're very poor.
