I have recently started the K1 process to bring my Fiancee back to Denver from Mexico, I sent the I-129F form in about a week ago. She is also currently in the process of trying to get a tourist visa so she can come visit for a week or 2 while we wait for the K1 visa. My question is will she have a difficult time getting a tourist visa while the K1 visa is in the process/ and or will her getting a tourist visa implicate things with the K1 visa at all?

She can apply for a tourist visa while waiting for his K-1 petition to be processed and approved. However, you need to be honest about the fact that the petition has been filed. If you aren't truthful about that, not only could it cause a problem for the tourist visa, it could also impact on the K-1 later on. If she can convince the interviewing officer that he really intends to go for a short visit and return, he can be issued the tourist visa. the fact that he has a fiancee in the US whom he intends to marry and live with is a complicating factor, so she might very well be turned down, precisely because people do frequently attempt to circumvent the fiance process. So, even though you think it's ridiculous, the officer will have seen other people who have done precisely that. But, as long as he's convinced your fiance is different, he can approve the visa.

Thank you for the information, She has her interview for the tourist visa on Dec 2nd. She was a an au-pair while living here and she has a letter written by the host family she lived with saying that they're the main purpose for her visit back up to the states. Will she need to disclose to the interviewer that she is currently in the K1 process or only answer questions that are asked?

My experience with interview for B2 visa, Do not volunteer information.

That's what I was always told. Just answer short, don't tell an entire story. The more you say, the more problem you might get into.
