I believe you will only need translations for Adjustment of Status at the USCIS after you marry, as the Bangkok consulate does not need translations of Thai documents, USCIS will require translations of all birth certificates (fiancee and any children, whether or not accompanying). The medical is a U.S. form, so no need to translate, but make sure you receive the record of immunizations (DS-693) outside of the package as you may need to have that transcribed to the I-3025.

The medical is in English already. The documents will be sealed. She will not have access to them. Jin's immunization form was in English as well.

Just translate the birth certificate and marital status. (if she has kids, get the birth certificate translated now even if they are not immigrating together) You can wait of course until you file the AOS. It's just cheaper and easier in Thailand.

As slowlyman stated if she has kids make sure the father has signed a letter of no objection. Here is a link from the embassy website in English and Thai.
